Insalata for me is a lot like an accessory that only Italians can make. With finesse and attention to detail. It takes a total of 10 minutes to put together, needs ingredients that are normally part of my kitchen. My pots with basil leaves are a year-long affair, and at any given point of time, cheese is my go-to comfort food. It’s very helpful to have a variety at hand. This appetiser pairs well with a lasagne or even as a starter before a Shepherd’s pie dinner.
OK, this is no rocket science. If you have a keen kitchen-friendly kid, they can put this ensemble together. Cut the tomatoes into neat thin rounds. Slice the round mozzarella into slices too. Place them on a platter, tomato below, cheese on top, and place a neat basil leaf on each of them.
Grind some sea salt and fresh black pepper, and drizzle olive oil and balsamic vinegar on each of them.
